Simple keto coleslaw
Ingredients
- 1 lb 450 g green cabbage
- ¾ cup 180 ml mayonnaise or vegan mayonnaise
- salt or ground black pepper to taste
Instructions
- Shred the cabbage with a sharp knife, mandolin slicer or a food processor.
- Place in a bowl and add mayonnaise, salt and pepper. Stir well and let sit for ten minutes.
Tip
Add more flavor by adding a splash of lemon or vinegar, dijon mustard, and finely chopped parsely.
And don't forget to make a big batch... coleslaw keeps in the fridge for 3 or 4 days.
